Chinese Vinegar, Chinese Black Vinegar or Black vinegar is a Chinese specialty that is always on hand in most restaurants in that country. Some say that black vinegar is Asian balsamic Rice Vinegar. Black Vinegar comes in very dark color and an extremely aromatic aroma with a sweet touch. How is Chinese Black Vinegar made?

Chinese black vinegar is a common and important part of many Chinese dishes, adding a flavor complexity similar to balsamic vinegar. Available in Asian markets, it is made from fermented millet, sorghum, or glutinous rice.

Starting motor

The first step in making Chinese black vinegar, or any type of vinegar, begins with a starter, or “mother,” which contains the bacteria that ferment your vinegar solution. Vinegar starters are available at vinegar supply stores and some wine stores.

For most vinegar, the solution is a juice or wine. But for black rice vinegar, the solution is rice or cereal water made by soaking the grains in water overnight, then straining the grain with cheesecloth.

Fermentation

The starter is poured into the container with the solution. The container is kept in the dark and warm place to ferment. The solution must be “fed” with more than grain rice or water several times during the fermentation process, which should span at least a week.

Pasteurization

Once the Chinese black vinegar is ready, it must be pasteurized to kill bacteria and prevent a “mother” from growing inside the container. During this step, the vinegar can also be diluted with water. To pasteurize black vinegar, it must be heated to 155 degrees Fahrenheit for at least 30 minutes. After pasteurization, the vinegar is ready to be bottled.

How Baozi is served with Chinese black vinegar

Baozi (pronounced “baodza”) are Chinese dumplings stuffed with pork that is steamed and characterized by their fluffy coating. It is made with wheat flour and yeasts (both natural and chemical). It is very similar to the Japanese Nikuman.

  • Mix the dry ingredients for the dough in a bowl, and then add the water and oil. 
  • Mix until a homogeneous mass is left. 
  • Knead for several minutes until elastic and shiny. 
  • Adjust with more water or flour if the desired consistency is not achieved.
  • Leave the dough in a bowl, covered with plastic wrap, in a warm place for an hour to double its volume.
  • While the dough rises, we make the filling. Briefly sauté the onion in the sesame oil until it is translucent. We reserve it on a plate.
  • In a bowl, we mix the meats with the ingredients, including the onion that we have sautéed, which should already be warm. 
  • Mix very well, preferably with your hands, until you get homogeneous dough. 
  • We flatten the meat mass in a bowl, and with a knife, we ​​make marks to distribute it in 8 equal portions.
  • We do the same with the dough, cutting it into eight equal parts and making eight balls.
  • We take a dough ball and flatten it, either with our fingers or with a rolling pin. 
  • We must get around a dough sheet of about 15 cm in diameter. 
  • We place a portion of meat in the center, and we surround it with the edges of the dough sheet, making a small basket that we will seal at the top. 
  • Steam for 15 minutes. 

Serve the Baozi’s with Chinese black vinegar, soy sauce, mustard, or a mixture of soy sauce, dark rice vinegar, and sesame oil.
