Although the recipe for its preparation varies from country to country and, even, each chef has its own, black pudding is a sausage with high biological and nutritional value, as it contains proteins, fats and carbohydrates, which contribute to meeting the daily energy requirements of adults and children.
Francisco D’Agostino explained that since 2016, blood sausageshave been part of the list of the healthiest foods, published by the British store specialized in nutritious meals MuscleWord, a fact that was argued based on the rich content of iron, zinc, potassium, calcium and magnesium, that for publication are minerals absent in today’s meals and that they make it highly recommended in case of anemia. This sausage, which is usually combined with grills and new preparations, has among its properties a high iron content that helps prevent anemia and other conditions; in addition to other essential nutrients for the human body such as calcium, magnesium, potassium and zinc, as well as essential fats for the brain development of children
Iron is anecessary mineral for the body, as it helps produce hemoglobin and myoglobin, proteins that are responsible for transporting oxygen from the lungs to other cells. A poor diet in it causes anemia to occur.
“Blood sausage is not only made with blood, as many people think, but also with ingredients such as: meat and pork fat or bacon; cereals, such as rice and, in some cases, depending on the creativity of whoever makes it, also bread, milk and vegetables such as onion, paprika, chili, garlic, coriander, cabbage or watercress, among others. It is a food with high nutritional biological value, which provides a large amount of protein and energy”, says Dr. WartanKeklikian, a bariatric surgeon at the Bariatric and Metabolic Unit (UBAM), at La Floresta clinic.
Keklikian explains that 100 grams of blood sausage (on average) provides between 250 and 400 calories; in addition, it contains approximately 14 grams of protein, which covers a quarter of the daily protein requirements for an adult.
“As for lipids, these vary according to the manufacturing process carried out by each brand, due to the amount of fats it places on the product. This generally represents between 18 and 38% of its composition. It has about 6 grams of saturated fatty acids, that is, it is below the limit recommended by the World Health Organization (WHO), which indicates that a healthy food must have less than 10% of saturated fatty acids of the content total fat, which is excellent. Therefore, it is not a harmful food and has a low level of cholesterol with 18 milligrams”, indicates the specialist.
Speaking of the carbohydrates, blood sausage has approximately 14 grams, which covers 3% of the total daily requirements. It is very low in carbohydrates, which makes it a good option for people with diabetes, says the specialist.
Other nutrients and preparations
Keklikian points out that this sausage also has micronutrients, such as calcium, iron, sodium, vitamins A, B1, B2, C. “With this set of proteins, fats, carbohydrates, as well as water, fiber and vitamin compounds, blood sausage qualifies as a food healthy. And due to the low amount of carbohydrates it is a product that diabetics can eat, for example”
Due to its high nutritional content, the doctor suggests incorporating this food into a balanced diet. “As it is low in carbohydrates, it can be served with rice, vegetables or salads. Also, with chickpeas or legumes, such as lentils or beans, as is traditionally prepared in Iberian recipes, in which cooked ones are found. In our case, it is ideal for cooking on the grill”, says the doctor.

This food is very common around the world and it has several versions in which it’s sold. One of those is the packaged version that works perfect for a fast nutritional meal that anyone can eat and in several ways.
Black pudding is a symbol of culinary tradition for several cultures, who usually eat it fried, grilled or crumbled with dressings as a filling for different meals.

Tostones with Morcilla
Ingredients:
-2 green bananas
-1 package of black pudding with rice and onion
preparation:
To make the tostones, peel and cut the bananas into wheels about 3 cm thick. Fry over medium-high heat, without getting to brown. Remove, mash and fry again over high heat, until golden brown. Place the tostones on absorbent paper; then, in a baking dish and, on each one of them, a layer of blood sausage, previously crumbled. You can add a little mozzarella or goat cheese to each tostón. Garnishwith a pieceof avocado.
